Embarking on a gastronomic journey to Mie Prefecture in Japan, we set our sights on the renowned Matsusaka beef, one of the country's three major beef brands celebrated for its exquisite taste and health benefits. Our destination was Gyugin Honten, a time-honored restaurant nestled in the heart of Matsusaka.

Guided by Mr. Kobayashi, the fourth-generation proprietor, we delved into the history of Matsusaka beef, a culinary gem cherished nationwide. Gyugin Honten, established in 1902, stands as a testament to the commitment to preserving the authentic flavor of Matsusaka beef. Interestingly, one of the restaurant's founders was a former sumo wrestler, and the walls adorned with captivating photos of sumo wrestlers added a unique touch to the dining experience.

As we entered Gyugin Honten, we were greeted by an atmosphere steeped in tradition and culinary excellence. The restaurant, a recipient of multiple awards and featured in the Michelin Mie Guidebook in 2019, has upheld its dedication to delivering the highest grade of Matsusaka beef to its patrons.

The Matsusaka beef served at Gyugin Honten is carefully selected to ensure unparalleled quality. The rich marbling of unsaturated fatty acids, particularly oleic acid, not only contributes to the beef's succulence but is also considered beneficial for both beauty and health—a delightful bonus for any food enthusiast. The marbled fat has such a low melting point that it cannot be handled too much and proves challenging for the chef to prepare as it will melt with the heat of their hands hard to prepare. 


Our choice of the day was mizutaki, presented in the form of the popular shabu-shabu. The thick slices of Matsusaka beef were elegantly passed through steaming hot water, accompanied by two delectable sauces: a sesame sauce and ponzu with a delightful citrus twist. The beef, true to its reputation, melted in our mouths, leaving behind an unforgettable symphony of flavors.

The aroma adds to the anticipation of the very first bite 

Besides the delicious shabu-shabu we had that day, we also got to savor other dishes like sukiyaki, grilled items, and Shiochiri-nabe (a light soy-based hot pot.) 

 

At Gyugin Honten, there is an emphasis on the true taste of Matsusaka beef, they use carefully selected Matsusaka beef sourced from contracted farmers in every dish. These farmers feed and raise the cattle in the traditional way, preserving its authentic flavor. 

 

While taking in the nostalgic atmosphere of Gyugin Honten, you can feel the love of the farmers, chefs, staff, and the many people who enjoy it. This collective affection ensures the deliciousness of Matsusaka beef is upheld. It's a realization that Matsusaka beef isn't just a popular taste; it's a culinary tradition.

The farmers responsible for crafting Matsusaka beef have a unique approach, treating their cattle as cherished members of the family. It's a blend of humor and sadness, knowing that these cows are not just livestock, but creatures raised with love and daily conversations. Yes, it’s true, to my surprise, farmers even NAME their cattle. Farmers raise their cattle in as stress-free an environment as possible, talking with them, and giving them massages.

Gyugin Honten's historic charm is amplified by the fact that the restaurant building was once a Japanese inn. The inn was renovated, and the store first opened in 1902. The blend of traditional aesthetics and culinary mastery creates an ambiance that resonates with the rich history of Matsusaka.
