Embarking on a gastronomic journey to Mie Prefecture, we set our sights on the renowned Matsusaka Beef, one of Japan’s three major beef brands celebrated for its exquisite taste and noted health benefits. Our destination was Gyugin Honten, a time-honored restaurant nestled in the heart of Matsusaka, where a mouthwatering feast awaited.

Gyugin Honten

Guided by Mr. Kobayashi, the fourth-generation proprietor, we delved into the history of Matsusaka Beef, a culinary gem cherished nationwide. Gyugin Honten, established in 1902, stands as a testament to Mr. Kobayashi’s unwavering commitment to preserving the authentic flavor of Matsusaka Beef. Interestingly, one of the founders of the restaurant was a former sumo wrestler, and the walls adorned with captivating photos of sumo wrestlers added a unique touch to the dining experience.

A Testament to the Restaurant’s Careful Selection

As we entered Gyugin Honten, we were greeted by an atmosphere steeped in tradition and culinary excellence. The restaurant, a recipient of multiple awards and featured in the Michelin Mie Guidebook in 2019, has upheld its dedication to delivering the highest grade of Matsusaka Beef to its patrons. The care and pride that go into each selection reveal a deep reverence for flavor that transcends the ordinary.

Matsusaka Beef

The Matsusaka Beef served at Gyugin Honten is carefully selected to ensure unparalleled quality. The rich marbling of unsaturated fatty acids, particularly oleic acid, not only contributes to the beef’s succulence but is also considered beneficial for both beauty and health, which is a delightful bonus for any foodie. The marbled fat has such a low melting point that chefs can barely handle it, as it starts to melt with the warmth of their hands. Crafting a perfect dish from such a delicate ingredient is truly a test of their culinary finesse.

Our choice of the day was mizutaki, served in the style of the popular shabu-shabu hotpot. Thick, decadent slices of Matsusaka Beef were gently passed through steaming hot water, accompanied by two delectable sauces, a fragrant sesame sauce and a bright ponzu infused with citrus. The beef, true to its reputation, melted instantly in our mouths, leaving behind an unforgettable symphony of flavors.

Mouthwatering Matsusaka Beef

The aroma adds to the anticipation of the very first bite.

Besides the delicious shabu-shabu we had that day, we also got to savor other dishes like sukiyaki, grilled items, and Shiochiri-nabe, a light soy-based hotpot.

At Gyugin Honten, every dish showcases carefully selected Matsusaka Beef sourced from contracted farmers who raise cattle using traditional methods. Their dedication preserves the authentic flavor of Matsusaka Beef; a flavor rooted in the heartfelt care of everyone involved in its creation.

While taking in the nostalgic atmosphere of Gyugin Honten, you can feel the love that connects the farmers, chefs, staff, and delighted customers. That shared affection is the secret ingredient that keeps the deliciousness of Matsusaka alive. It is a reminder that Matsusaka Beef is more than just a popular taste; it is a valued culinary tradition.
